The very famous and all time favorite snack in Maharashtra is Vadapav. It is something I really miss when I am very hungry and reminds me of my college days. Many times when we are in hurry or have no time we used to grab a vadapav either from our Hostel mess or from college canteen.
Ingredients:
Boiled Potatoes (4 count)
Green Chillies (per choice)
Garlic
Ginger
Coriander Powder
Cilantro
Oil
Salt
Mustard Seeds
Cumin seeds
Curry leaves
Lemon Juice
Laadi Pav
Asafoetida (Hing)
Turmeric Powder
Baking Soda
Recipe for vadapav filling:
1. Boil potatoes over 4 whistle
2. Mash the potatoes after cooled down
3. Grind a paste of Chilles, Garlic, Ginger
4. Put a pan on Stove, and heat oil
5. Once oil is heat, put mustard seeds, cumin seeds, asafoetida and curry leaves
until they crackle.
6. Add the paste of chilly, ginger and garlic into the pan and saute for few seconds
7. Now add turmeric powder
8. Add mashed potatoes into the pan and saute the mixture
9. Add Salt per taste to this mixture
10. If you like you can add few drops of lemon juice as well (my choice)
